Two Roots, One Distinctive Cuisine <\/h3><\/div>

At Rongorri, traditional Basque cuisine is our starting point. We prioritize quality ingredients, choosing local and seasonal produce whenever available. We approach the recipes and techniques of our region with respect for the origin and character of every ingredient.

Building on this foundation, Yirong thoughtfully incorporates Chinese flavors learned through his family. The result is distinctive, personal cuisine in which every influence complements the ingredients without overshadowing their character.<\/p><\/div><\/div>\n<\/div>\n<\/div>\n<\/div><\/div>\n\n\n\n

Chef Yirong: Basque Tradition and Family Heritage<\/h3><\/div>

Born in Fujian and raised in Bilbao, Yirong grew up with two different culinary traditions. At home, he discovered the flavors and craftsmanship of his father, a Chinese chef specializing in Fujian cuisine. In the Basque Country, he found the culinary culture upon which he would build his professional career.

His culinary training in the Basque Country and his experience with the traditional cuisine of Getaria allowed him to deepen his knowledge of local ingredients, techniques, and Basque culinary traditions. He later broadened his expertise with a master\u2019s degree in restaurant management and innovation, as well as experience organizing large-scale events.

At Rongorri, Yirong creates cuisine rooted in Basque tradition, thoughtfully incorporating nuances from his family\u2019s culinary heritage. His approach centers on quality ingredients, seasonality, and live-fire cooking, evolving while remaining true to its roots.<\/p><\/div><\/div>\n<\/div>\n<\/div>\n<\/div><\/div>\n\n\n\n
